My black pudding eggs Benedict with kale chips is an interesting take on a commonly seen brunch dish. Beautifully poached eggs with a large slice of black pudding. I would have preferred the use of brioche for the bread base rather than sourdough and I ended up only eating half the bread. I enjoyed the combination of hollandaise sauce with the blood sausage, it was an interesting and tasty pairing.
